<p>1、滑炒与滑熘相似,滑炒的操作方法是先将菜肴原料进行调味后,用蛋清糊浆拌均匀,放入四成热油内滑散滑透,倒入漏勺。原勺留少许底油,将葱、姜、蒜及配料放入煸炒,再加入主料及调味品翻炒,拢少许粉芡,淋明油出勺。这种做法叫滑炒。</p>
<p>2、滑炒的特点：汁薄稍带底芡,口味鲜嫩滑润,色泽洁白。</p>
<p>3、滑炒上浆的目的：防止原料在滑炒过程中失水退嫩,目地是滑炒上以保证菜品软嫩鲜美。</p>
